Constanza Cabello
After tasting a glass of 1989 Vega Sicilia Unico in 2004, Constanza Cabello fell into a passionate, full-fledged relationship with the world of wine. After 20 years working within the hospitality industry in established restaurants, including Tosca at The Ritz Carlton and several dynamic restaurants within Hong Kong’s Black Sheep Restaurants portfolio, she has set the foundations for the next chapter of her wine adventure as Founder of The Itinerant Sommelier.
Constanza Cabello's roots lie in Valentin Alsina, a small town nestled just outside the bustling capital city of Buenos Aires, Argentina. Here, in a community where everyone knows each other and conviviality is paramount, she developed a deep appreciation for the social aspects of life. As an only child, she fondly recalls the carefree summer afternoons spent playing soccer or riding bikes with friends or immersing herself in the world of books.
After this symbolic moment in 2004, where the dark ruby swirl and fragrant bouquet of her glass of Vega Sicilia inspired her, she embarked on an international journey exploring dynamic and iconic wine regions across Argentina and Europe. Over the tenure of her career, she has worked closely with the renowned Familia Zuccardi in Mendoza, training in winemaking and growing, explored some of France’s most lauded wine regions, including Champagne and Bordeaux and spent her time working with winemakers in the distinct terroir of Mount Etna and Sicily, understanding the country’s unique viticulture.
For the last decade, Constanza has settled in Asia, bringing her knowledge and expertise of these Western regions to the industry while expanding her knowledge of the viticulture of China and beyond. An international city, Hong Kong has proven to be a doorway to wine exploration and other passionate individuals who have supported her journey, including Master Sommeliers Arnaud Bardary and Pierre Marie Patteu, as well as Marina Beltrame and Fernanda Orellano, two women sommeliers who are shaping the future of the industry.
Constanza’s goal is two-fold: to advocate for new, emerging wineries, showcasing their beauty and diversity to enthusiasts seeking unique experiences, and to open the world of wine to new audiences through approachable knowledge and female leadership.
For Constanza, it is these stories that she wants to share, that while wine is an integral part of her life and a cultural experience, it has value for the community and that behind every beautifully bottled vintage is a passionate human, a dedicated wine grower, or a family that works tirelessly to bring these wines to the world.
